I was born and grew up in Ecuador where I was spoiled with exotic local foods that came from all regions: highlands, coast and jungle.  Ceviches, hornados, locros, encocados and so many more delicious dishes that became part of who I am as a chef.

At age 16 I moved to France with my family where I uncovered a whole world of gastronomic technique. For the next 10 years I studied, and worked and traveled all things culinary. From Europe, to the US, to Asia & the Nordics, my perspective is global.

TASTING MENU - RUTA DE LOS VOLCANES

Each dish I prepare is a tribute to the land that surrounds us, to the mountains and volcanoes that connect us. On this journey of flavors, I want every bite to take you to discover the essence of our Ecuadorian land, in every ingredient, in every aroma. We make our own cocktails using fresh, local ingredients and local liquors whenever possible. We also have an outstanding selection of wines from Ecuador and France.
