I was born and grew up in Ecuador where I was spoiled with exotic local foods that came from all regions: highlands, coast and jungle. Ceviches, hornados, locros, encocados and so many more delicious dishes that became part of who I am as a chef.

At age 16 I moved to France with my family where I uncovered a whole world of gastronomic technique. For the next 10 years I studied, and worked and traveled all things culinary. From Europe, to the US, to Asia & the Nordics, my perspective is global.

Each dish I prepare is a tribute to the land that surrounds us, to the mountains and volcanoes that connect us. On this journey of flavors, I want every bite to take you to discover the essence of our Ecuadorian land, in every ingredient, in every aroma.
