In the heart of Quito, an extraordinary event brought together chefs, communities, and change-makers to celebrate the immense potential of the Amazon. More than just a dinner, De la Selva a la Mesa<\/em> was a powerful statement: that the flavors of the amazonian culture can inspire not only culinary excellence, but sustainable development for Ecuador and beyond.<\/p>

Over 40 guests attended the event, including representatives from Amazonian communities, international organizations, the public sector, media, and the culinary world. Organized by Canopy Bridge with the support of WCS Ecuador<\/strong>, the evening was designed to spark conversation and collaboration around the value of Amazonian products, as both cultural treasures and economic drivers.<\/p>

The experience centered around a five-course dinner that highlighted ingredients that are native to the Amazon region<\/b>. Macambo, chonta, wild yuca, s\u00e1balo, and cachama were just a few of the elements transformed into refined dishes by a team of renowned chefs, each plate rooted in territory, memory, and biodiversity.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t
