Our 8-course tasting menu, La Ruta de los Volcanes, is a culinary journey through the ingredients, stories, and rituals that shape the spirit of the Ecuadorian highlands. Each dish is inspired by ancestral traditions and native ingredients, brought to life through immersive live performances that celebrate this rich heritage.

Chimbacalle: A folkloric scene that recreates the joy of a family celebration in 19th-century Quito, featuring dances full of warmth and spontaneity.
Danzantes de Chimborazo: A vibrant display of faith and tradition with elaborate costumes and rhythms rooted in the yaraví and yumbo styles.
Solsticio, Tiempo para Compartir: A festive ritual honoring Pacha Mama and the harvest season—music and dance come together in a collective expression of gratitude, abundance, and community.
Pairings That Tell Their Own Story
To complete the experience, we offer a pairing menu featuring artisanal cocktails made with Ecuadorian ingredients such as mead, mortiño, lemon verbena, and agave flower. A wine pairing with national and international labels is also available.
