
In the heart of Quito, an extraordinary event brought together chefs, communities, and change-makers to celebrate the immense potential of the Amazon. More than just a dinner, De la Selva a la Mesa was a powerful statement: that the flavors of the amazonian culture can inspire not only culinary excellence, but sustainable development for Ecuador and beyond.
At the same time, SOMOS was honored with a recognition for its role in sharing a meaningful experience with international tourists that were visiting Ecuador, reaffirming our commitment to show the best of our country with the world, through flavor, hospitality, and vision.
A Gathering with Purpose

Over 40 guests attended the event, including representatives from Amazonian communities, international organizations, the public sector, media, and the culinary world. Organized by Canopy Bridge with the support of WCS Ecuador, the evening was designed to spark conversation and collaboration around the value of Amazonian products, as both cultural treasures and economic drivers.
The experience centered around a five-course dinner that highlighted ingredients that are native to the Amazon region. Macambo, chonta, wild yuca, sábalo, and cachama were just a few of the elements transformed into refined dishes by a team of renowned chefs, each plate rooted in territory, memory, and biodiversity.

Our chef Jonathan Gaibor was honored to participate in this unique experience, cooking alongside other chefs committed to showcasing the depth and richness of Ecuador’s ingredients. This special event was a sensory journey, but also a symbolic one, as it was a reminder that the Amazon is not a distant frontier, but a living, dynamic territory whose stories deserve to be heard and shared through flavor.

As one of the selected culinary destinations, SOMOS offered guests a taste of Ecuador’s creativity, diversity, and contemporary identity.
